Proses pengeringan berlangsung selama beberapa hari hingga minggu, menghasilkan daging yang renyah di luar dan kenyal di dalam. Teknik ini awalnya digunakan oleh suku Khoisan untuk menjaga daging agar tahan lama di iklim panas, sekaligus memberi cita rasa unik yang gurih dan sedikit manis.
